I’m not a huge fan either. First time I’ve made a ketchup type sauce and I tired to trick it up a little more than the straight ketchup. Next time will be brown gravy

Turned out really good

Enjoyed this thread. I dig meatloaf but my bride isn’t a fan.... so we abstained. I’m in w whatever is done next week, I hope.

I made the Pioneer Woman meatloaf yesterday
It is my favorite and a crowd pleaser. The thin sliced bacon on top with the ketchup based sauce really makes it.
I normally add onions and garlic and a little ground pork and veal to her recipe and bake it on a broiler pan to drain away the grease.

I made a big turkey meatloaf. It turned out to be very good and very moist.
3 lb ground turkey
2 c. dry breadcrumbs (or use crushed crackers, croutons, stuffing mix, etc)
6 Tbsp dried minced onion (or 1 large onion, minced)
2 1/4 c. milk
3 egg, beaten
3 tsp soy sauce
1 1/2 tsp seasoned salt
black pepper to taste
In a large bowl, fold ingredients together just until the mixture is combined. Place onto a foil lined cookie sheet and pat out into a rectangle about 1 1/2" thick, leaving a shallow ditch in the center for the sauce.
For the sauce:
1 c. ketchup
6 Tbsp brown sugar
3 Tbsp prepared yellow mustard
Mix together and spread evenly on top of the meatloaf.
Bake the meatloaf in a preheated 350*F oven for 1 hour or until the internal temperature is 160*F or the juices run clear. Let rest about 10 minutes before serving to keep it as moist as possible.

I'm only six or seven weeks late!
One pound of ground beef and one pound of ground pork. (I prefer a mix of veal, pork and beef, but shopping isn't as easy as it once was.) Also, I usually use Progresso bread crumbs, but the store was out. Not sure if you can tell, but that's about 1/3 of a red bell pepper in the pic. That's all I had, but it worked out just fine.
Changes from the pic: I added a second egg, and only used half of the onion pictured.
I don't saute my onion and red bell pepper. They will get tender during the cooking process.
Despite the messy plate, the meatloaf was pretty damn good. Well seasoned, not dry. Just right!

ETA:
1-1/2 lbs ground beef
3 eggs
1-1/2 sleeves ritz crackers
1/2 cup onion chopped
1/4 cup bell pepper chopped
4 oz shredded sharp cheddar
1/2 cup milk
1 tsp salt
1/4 tsp pepper
Topping
1/2 cup ketchup
1/2 cup brown sugar
1 tsp mustard
Simmer topping for meatloaf and set aside
Beat eggs and mix ingredients in bowl bake at 350 do 30 min then spread topping and bake another 30
I normally use around 4-5 lbs ground beef and double other ingredients when I make this because what the hell you gonna do with just 1-1/2 lbs meatloaf? Also I adjust cook time because of much larger loaf
