Wet, Creole, tomato...The dry, brown Cajun offerings are, not as good.

I would agree. Most of the time I make a brown jambalaya with no tomato products, but sometimes I will add a 1/2 can sauce/paste and 1 small tomato diced so fine you can't see it. With a spoon of roux, you cannot see it has any tomatoes and it has a slightly different taste, but will pass for a brown jambalaya.

Brown shrimp jambalaya is very common DTB and is quite good, especially with white beans.

Proper brown jambalaya is not dry. You’re hanging with the wrong crowd.

I like brown and grew up on brown, but my wife, who’s from the New Orleans area loves a creole jambalaya with shrimp and sausage. So I have to make that sometimes and It’s pretty good. I don’t mind the change of pace sometimes.

To me, the best jambalaya is a mixture of both. Cajun and Creole food makes Louisiana unique… Throw a few Creole tomatoes diced up in your trinity and deglaze the pot with your favorite 5th of whiskey

Lately I use mix by a local guy called "Smokin Oyster". Really good stuff.

I haven't tried adding tomato to a jambalaya, but this is a nice product to have on hand when you want to add just a little umami bump without it being an obviously tomato dish. It's concentrated and a tablespoon or two is nice in some dishes that you wouldn't normally think of using tomato in.

And it's delicious, however, we are talking the merits of "tradition" and when one perceives jambalaya, what do they think of.

I never encountered a Jambalaya debate on Tigerdroppings. I have seen some vicious fights and terrible name calling but never a debate. This may be a first.
