I'm talking about restaurants. This is one of, if not the largest sales volume market for Kitchen Bouquet in the US.

If you need food coloring to make your jambalaya brown, you are skipping the essential browning steps which, unlike KB, actually add flavor.

The popularity of the Jambalaya Calculator is due to the difficulty of cooking rice at volume. So I guess you're right, sort of.

But why would people who have trouble with rice choose jambalaya? It's harder to cook than most any other rice dish I can think of.

I've always been brown

The wife has always been red.

I do a hybrid version I guess. Don't much care about traditional. I cook for me.

I always considered Jambalaya as an open fridge and see what leftover proteins you have. Add the trinity, garlic, mushrooms and a can of Rotels.
