Thawing Frozen Butts

I’ve got four 9-12lb Boston butts in the freezer that I need to smoke. What’s the best and safest way to thaw them? Slow thaw in the refrigerator? Water bath?
I’m not needing them urgently- I just found them digging through a deep freeze. They are about a year and a half old, so they need to go.

Into the fridge on a platter to catch drainage for two to four days, just like a frozen turkey. That is the safe way.

Fridge. I have put partially frozen butts on the grill without issue

Water bath for a few hours to get it started and then put in the fridge overnight to finish thawing. Gonna take days in the fridge only.

I pop them in the fridge 3-4 days before I need them. I put them in gray food tubs, those things are great and only like $6 at Academy or Sams.

Put them in the sink sans water for a few hours. Finish in the fridge. Allow at least 2 days.

Call me crazy, but I’ve always defrosted butts, turkeys and other big pieces of meat by leaving them on the counter for the better part of the day and then finishing over night in the fridge. Never had an issue.

And you never will. That's the way to do it. The danger is when the outer portion hangs above 41 F for 6+ hours. That won't happen with frozen butts on a counter for 10 hours.

I just thawed one, put it in the sink under water for 5 hours.

Fridge thaw over several days is ideal

Same. Or I throw them in the sink overnight. In the morning they are still ice cold and partially frozen in the center. Let defrost in the fridge from there. Never an issue.
