Thai Shrimp Curry, Low Carb, with vegetarian option (Photo Recipe)

This is a nice low carb Thai recipe with excellent Thai flavor. You would be pleased to serve this to anyone. If you are not concerned with low carb, serve this over Jasmin rice.

Need:





Shrimp for our recipe that feeds 3, we used 14 shrimp, cooked and deveined, 2 T coconut oil, 2 cups Zucchini cut into 1 inch pieces, 1/2 red bell pepper, 1/2 cup sliced green onions, 1/2 of a medium onion - sliced, 1 1/2 cups mushrooms - sliced, 1 T ginger, 2 cloves garlic - minced, 3 T red curry paste, 16 ounces can of coconut cream, salt and black pepper to taste, red pepper flakes to taste - garnish for serving.

Heat sauté pan (or wok) and melt coconut oil.



Add onion slices and green onions.



When onion slices become translucent, add the zucchini.



Cook the zucchini for a minute or two, then add the red peppers.



Cook for a couple of minutes and then add the mushrooms



Cook for a couple of minutes and add the ginger and garlic.



Cook for a couple of minutes and add the coconut milk.





Add the red curry paste





and salt and black pepper



Stir and taste for seasoning.



Add shrimp - If you stop before adding the shrimp, you will have an excellent vegetarian red curry.







Plate with red pepper flakes garnish





Enjoy

You should’ve added some of your 17 hour oven Roux to thicken it up.

One side of my girlfriend's family is Malaysian and she has perfected a coconut chicken curry. It's my favorite dish of hers. I did send her this, though, and I think we're going to give it a whirl this weekend.

I would enjoy this recipe with the rice, but I am on a crusade to get back into fighting shape and the rice is not worth it right now. There are three good options with this recipe. Obviously it would be improved with the addition of Jasmin rice. It could also be adjusted to a nice vegetarian dish by simply omitting the shrimp. A third option would be to substitute chicken for the shrimp, and we have done that too.




This is a nice curry and the taste stands up well with or without the rice. The heat is good and the flavor (coconut and red curry) distinct. I could eat this once a week and stay happy.

Red curry is close to my favorite thing to get at a Thai restaurant. There is a place here called Cafe Equater and I get it all the time. I have substituted cauliflower rice and you get the texture of rice but not the absorption but still, it works well.

i agree. I like the texture and the taste is extremely mild so its perfect for a rice substitute

I prefer the green curry for shrimp. Add some Thai Basil to it as well.

Never knew Curry was so straightforward. Made some butternut squash Curry using your recipe as a guideline. It was devoured as soon as it cooled enough to eat.

Looks great.Just substitute cauliflower rice and most Thai curry dishes are Keto, or damn close to to it. I didn't see any fish sauce... Red Boat is a good one recommend by my neighbors Thai wife. These are a good cheat too: Lobo Curry Paste - Amazon

Yes, fish sauce is a good addition. However, I do not care for it and if given a chance, I leave it out. And I did here, but yes, it is a good additional seasoning.
