Thai and/or Vietnamese Recipes

Really have taken a liking to Thai food and want to start making some things at home. Anybody have some recipes to share?

My Vietnamese recipe go-to is Andrea Nguyen. I have her "Vietnamese Table" as my gold standard. She has a new cookbook out as well...Vietnamese Food Any Day.

If I can remember the recipe, I make panang chicken every now and then.

2-3 chicken breasts
1 can of coconut milk
2 teaspoons of red curry paste
Sliced veggies - I usually use yellow onion, carrots, and bell peppers.
S&P
A little brown sugar and srirrachia to finish it up to taste.
Thai basil

Pan fry the chicken until done in some vegetable oil. Remove and add a little more oil, and saute veggies until almost done and remove from pan. Add coconut milk and curry paste and mix well and cook it until it reduces a little. Add veggies and sliced chicken back to pan, and cook until it's all done. Add salt, pepper, brown sugar, and hot sauce to taste, then finish with some thai basil. Serve over Jasmine rice.


EDIT: This also should have a tablespoon or so of fish sauce. Knew I'd forget something. You can also substitute honey for the brown sugar.

I made this a few weeks ago and it was GOOD. Easy way to class up those cheap, paper thin pork chops they sell at the grocery store. Splurge for the Red Boat fish sauce, it's the shite.

Check out mark wiens on youtube I have made a few of his dishes that came out pretty good. The best Thai curry I’ve made is from all recipes here it is. I use the maesri brand curry paste the green one is by far the hottest.

I’ve been looking at recipes like this one. I may try it out this Friday. But I’m going to sub in thighs and coconut oil. No brown sugar and cauliflower “rice”

Vietnamese Bun (sauce below)
Ingredients
* 2 Packs of sliced boneless pork loins
* 1 Package rice vermicelli
* Sirachia hot sauce
Marinade
* 12 Tablespoons shallots, minced
* 6 Tablespoons garlic, minced
* 2 Teaspoon of minced ginger
* 1 Cup sugar
* 4 Tablespoon fish sauce
* 2 Tablespoon thick soy sauce
* 1 Tablespoon pepper
* 1 Tablespoon of white pepper
* 12 Tablespoons sesame seed cooking oil
* 1 Tablespoon sambal
* 6 Tablespoons of hoisin
* 2 Tablespoons of cooking wine
* 2 Teaspoon of Chinese 5 spice
* 2 Teaspoon of Curry seasoning
Vegetables
* 1 Bunch of mint
* 1/2 Bag of (sliced) carrots
* 1 Bag of bean sprouts
* 2 Cucumbers
* 1 Bunch of cilantro
* 1 Bunch of green onions
* 4 Shallots
* 1 Teaspoon of minced ginger
* 1/2 Head of lettuce
* 1/2 Can of peanuts

Instructions
1. Mince garlic, ginger and shallots. Mix in a bowl with sugar, fish sauce, thick soy sauce, curry, Chinese 5 spice, curry, sambal, cooking wine, black and white pepper, and oil until sugar dissolves.
2. Marinate the meat overnight.
3. Preparing veggies: dice lettuce, Julian cucumbers and carrots
4. Grill meat for 4 minutes on each side till golden brown.
5. Slice and brown 4 shallots, stems of cilantro and 1/2 a bunch of green onions (bulb side) in oil.
6. Chop peanuts
6. Assemble your bowl with veggies, noodles, and garnish. Top with peanuts and browned shallots mixture. Add Bun Sauce to your liking. Optional: top with Sriracha hot sauce.

Bun sauce
Ingredients
* 6 tbsp. water
* 2 tbsp. sugar
* 1.5 to 2 tbsp. fresh lime or lemon juice
* 2 tbsp. fish sauce
* finely chopped garlic
* 1/2 teaspoon of Sambal hot sauce (Siracha Huy Fong Brand)
* 1/2 teaspoon of minced ginger

Instructions
1. Combine water and sugar in a bowl.
2. Add lime or lemon juice in increments until you like how it tastes
3. Add fish sauce in increments until you like how it tastes
4. Top with garlic and sambal

Chef V's Burma Jam

This former fairly well respected chef pre Katrina did a few old school videos of some Asian Fusion things. I've made this recipe and it's awesome.

The She Simmers blog by a Thai lady, Leela Punyaratabandhu, is pretty good and has won some awards. Lots of recipes. LINK

She goes into great detail on some things.

No recent posts, but it looks like she may have been busy promoting a book for the the last few months. She has a couple of cookbooks.

Someone mentioned Andrea Nguyen. She has a couple of recipes---Vibrant Turmeric Coconut Rice and Grilled Lemon Grass Pork Chops---recently posted on the Washington Post in the "Voraciously" food section. She also has a basic article there on cooking Vietnamese food in America.

Her ga nuong recipe (grilled chicken) is ultra simple and dead delicious. Tastes exactly like the grilled chicken you'll get at most any Viet restaurant. Boneless, skinless thighs marinated for 30 mins or less in a mix of lime juice, oil, black pepper, fish sauce, pinch of sugar, garlic. Incredibly delicious.
