Worked a project for maybe 8 months one time with an equipment developer in KC. I would go there every other week for 1 - 2 days to review their progress and scarf down all the BBQ they would feed me. Was a good 8 months. The process equipment they developed was exactly what we wanted, too.

I worked in KC too, they have some excellent bbq. what was it, Gates had the guy who yelled at you when he took your order.

I don't think that I misread this. If I did, can you explain it. For example, how Blue Oak (which I love) doesn't try to copy TX BBQ?

Kup and I go back and forth on OT, just kidding with him. You won't hear me saying Nola BBQ is better than Texas BBQ unless I am joking.

who says BOB does better Q than some of the top places in Texas?

But, Gonzo would be a better comparision.

I'm trying to decide if I ever had bad BBQ. At the moment I think I haven't (ever had bad BBQ). Some definitely was better. At the moment I have no idea where it was.

I don't think Texas BBQ really cares how others do it, what their traditions are, what they're known for.
