I want to take what’s left of the 2018 year and thank this board for all the tips, tricks, ideas, recipes, laughter and banter that you provided me of this 2018 year. I look forward to 2019 and all that comes with it on thIs board.

I have a few:
1. Hot topics brought about the use of Kitchen Bouquet- to use or not
2. Who’s jambalaya is better- Gonzalas, brown or other
3. Gumbo made with or without tomatoes
4. The same subjects are asked, if you use the “search” feature all your repeat questions are answered

I like some juicy IPAs. I just prefer them to have some actual hop flavor as well. AA is a very damn good DIPA. Enjoying them a lot, and very much moreso than the batch of Ghost I picked up around Thanksgiving.

I went back and checked. There were 200 pages of posts in 2018 (actually 199 but we still have today to make it even) 200 X 19 = 3,800 posts (give or take). That's maybe 3 days for the OT.
My comments:
- Loved all of the gumbo posts, (I always have loved gumbo posts) and there were many in 2018. I especially enjoyed being constantly reminded the way I have enjoyed this dish for almost 70 years (and the way my mom taught me) is an abomination to sacred Cajun culinary tradition.
For no particular reason, here are a few

Tater Salad
- I am intrigued by the love of Magnalight pots, All Clad cookware and Cast Iron
- There is the F&D miracle where (as far as we know) no one died this year after leaving a chicken on the counter overnight and still eating it. The jury is still out on whether this is smart or not. I think it is close to 60:40.
- Regardless of the city or content of the responses, I have enjoyed all of the "Traveling to XXXXX next week - where should I eat" posts. Strangely, I have been to many of the recommended places, but I traveled all over the country in work, for many years.
- I love all of the wine recommendations posts. It has been discussed and never made it, but we need a FWOTD post tied to the top.
- Costco vs Sam's posts are cute - always interesting.
- Sous Vide came and went, but I know it shall return - I enjoy reading that stuff. Also Instapot. Also Crockpot. Now it's Blackstone Griddles and Traeger pellet smokers. What tools of the trade will come next?
- Sad Stuff - Chef's that crashed and burned due to sexual harassment charges. Death of Anthony Bourdian. The decline of Tom Fitzmorris.
- I'll click on any BBQ post - pits - rubs - sauces - technique - Brisket - Shoulders - Butts - chicken. IMO, there is never a bad BBQ, grilling or smoker post. Who was the BBQ guy who went through all of the (known to mankind) meats in an attempt to teach us how to cook BBQ?
- I am a real sucker for any Burger post. There have been many in 2018.
- Here is my list of The Good, The bad and the ugly. I never skip any post containing the words "Olive Garden", "Taco Bell", "Gumbo/tomato/fer'it or agin'it?", "Chili", "Popeyes", "Orange Beach/gulf shores/Destin/", "ChickFillet", "Zaxby's", "Canes", "WYEI", "Costco/Sam's/Walmart", "McDonalds", "Sonic 50 cent corndogs", "Tom Fitzmorris", "Left out on the stove overnight", "Would you eat it?"....
- Like everyone here, there are posters I love to follow and always click on. I will keep names to myself.
- As near as I can tell, there was a "Show a photo of your roux" someone posted that hit 200+ responses. I didn't check the famous Chili post to see how many it had before the admins locked it. Probably more.

Cheers to whomever posted the Mississippi Pot Roast recipe recently, was legit. I lurk more than I participate, but I thoroughly enjoy this board and its posters.
