I understand tasso is highly spiced and smoked. Does anyone use Tasso in their cooking of gumbo, jambalaya or beans? Please share if you like or dislike Tasso?

Yes - sometimes I use it in red beans. It’s very good - gives a different flavor than pickled pork

I use it in white beans and have added some for a C/S gumbo before. It won’t hurt anything you put it in as far as gumbo/jambalaya, etc.

Tasso is delicious.

It goes great in the already mentioned items.

Try dicing it finely and adding to a mornay sauce. It goes great over pasta, chicken, or fish.

Love Tasso, it's really good in smothered potatoes or with green beans.

Use it anywhere you’d use bacon. Really good in an omelet.

I use Tasso like Bubba uses shrimp! I put it in most meals that I cook.
