Personally, I can’t tell. I’m fine with searing/grilling/blackening food with pepper, tastes fine to me.
Some people are more sensitive to it. My wife (no pics) in particular says it has a bitter taste, and a few people I’ve cooked for over the years have noted the same thing, doesn’t matter if it’s beef, chicken, pork, or fish. Not everyone’s taste buds work the same.
I’ve just got to the point I pepper afterwards, unless I’m just cooking for myself.

Unless it's smothered in pepper like a brisket I don't notice either.

I like to use Tiger Sauce. I also add some slap ya mama seasoning. Been doing this for years. Give it a try.

No need to marinate a good steak. Salt and pepper is all you need.
