Fresh cracked has a nice smell and taste, so I can see delaying to get that freshness.

But I don’t get the “burned pepper” thing. It sounds like it might make sense, but I’ve seared many steaks, on a grill or in a cast iron skillet, that were well covered in fresh cracked pepper, yet never have I or another diner complained of a “burned pepper” taste. What does it taste like?

Just know it isn't a Cuban marinade unless the oranges used are Seville (bitter) oranges.

Personally, I can’t tell. I’m fine with searing/grilling/blackening food with pepper, tastes fine to me.

Some people are more sensitive to it. My wife (no pics) in particular says it has a bitter taste, and a few people I’ve cooked for over the years have noted the same thing, doesn’t matter if it’s beef, chicken, pork, or fish. Not everyone’s taste buds work the same.

I’ve just got to the point I pepper afterwards, unless I’m just cooking for myself.

Unless it's smothered in pepper like a brisket I don't notice either.

It's terrible. I started using anything plant based after sear because of it.

I like to use Tiger Sauce. I also add some slap ya mama seasoning. Been doing this for years. Give it a try.

No need to marinate a good steak. Salt and pepper is all you need.
