Suggestions - After trimming spare ribs into St. Louis...

I've never been successful with Spares or STL so I've never been in your shoes, but off the top of my head I would think of grinding the trimmings.

I expect they'd probably make some mean breakfast patties.

Volume may be an issue though. Roughly how many pounds are you talking and what's the ratio of fat to lean?

You can make rib tips

I vacuum sealed the last trimmings I had from some spares and plan to make a red meat gravy with them. I guess I could probably make a regular meat, gravy, rice with them as well.

1. cut it into bite size pieces
2. season it same as rack
3. cook with rack
4. glaze with sauce
5. snack while you wait for rack to finish.

eta: @ OP, I treat the trimmings just like I do the ribs. They turn in to chef snacks...and for whoever else is hanging around the smoker with me.

Ditto on the rib tips. Have used this recipe and they come out delicious, especially with some nice fried rice. Will need to go to an Asian market to get some of the ingredients but you'll have plenty of those ingredients to make rib tips again next time you buy full spare ribs.
