HAPPY 2024!

This is the thread for submitting your entries to the side dish challenge. Any submission after 9:00 a.m Central Daylight Time on 1/17/2024 will be disqualified.

Likes are not votes. A new thread for voting will open up after the submission deadline has ended. Voting will end on Wednesday morning, at 9:00 a.m.

At least one photo is required, along with a description of your preparation and/or method of cooking.

Detailed recipe is not required but could help put you over the top!

I'm starting this a little early, as I have work things going on...

I made Candied bacon sweet potatoes.

I peeled, boiled, blended some sweet potatoes, butter, brown sugar, cinnamon, and heavy cream


I made some candied bacon with thick cut bacon, brown sugar, and red pepper flakes. I baked them in the oven until crispy but still with a little chew.


I topped the sweet potatoes with crumbled candied bacon, and uses a slice of Candied bacon as a spoon. This is a simple side that is sweet and salty. Delicious.

Looks great. Pork and sweet potato is the best combo.

Mine was made last night, but I want to be at my laptop to make the post later this evening.

Turnips Au Gratin



Need



Turnip roots
Cheddar Cheese
Half and Half
Ap flour
Salt & Black Pepper
Butter

Directions:

Peel and slice Turnips into 1/8 inch thick slices. I used the mandolin.



Place in Au Gratin Dishes



Season with Salt and pepper



Make bechamel sauce with butter, flour, salt, black pepper, and Half & Half









Add shredded cheese to white sauce and stir until melted







Sauce goes over sliced turnips and topped with crumbled crackers



Into oven for 30 minutes at 350 degrees f, until turnips are done and cheese slightly browned. Served here with Pork Tenderloin.

I felt bad for the delays and the fact that I'm doing doing this from my phone while my wife is driving, but it seems like most people waited until the last minute...

Honey-Maple Glazed Carrots


Carrots
Maple syrup
Honey
Butter
Brown sugar
Cinnamon
Nutmeg
Salt and pepper

Make the glaze and mix with the carrots. Bake at 400 for 30-40 minutes. A great holiday side!

Crab Imperial Stuffed Mushroom Bake

I made some stuffed mushrooms last week and it occurred to me that if you were cooking for a group, it might be easier to do sort of casserole style. And if it’s a holiday meal, what better way to make it special than by having luscious crab meat as the star of the dish?

Making my bread crumbs first, with Hero low carb bread. You could use panko.



Toasted in the oven at 225 until completely dried out, then crumbled.







Mayo, a beaten egg, lemon juice, parsley.



To make an imperial sauce:



8 Oz jumbo lump, 8 oz lump.




Fold the crab into the imperial sauce.




Layer it over the sautéed mushrooms.



Top with buttered toasted bread crumbs and bake.





It is decadent!

Lots of holiday side dishes have seafood or meat in them. Think oyster dressing or shrimp stuffed mirliton. Cornbread dressing, rice dressing, etc.

I've made turnips au gratin before and it's a good dish. It's also based on a very old recipe. In da Vinci's time, they called it armored turnips
