Lebanese Dinner: Kibbe and Kafta kabobs
Went full blown Mediterranean with sides of eggplant hummus, grilled eggplant, garlic butter naan, and tzatziki sauce
Kibbeh
Had to use 90% ground sirloin since they were out of lamb. I planned to use 70/30 lamb to beef ration. Plethora of spices: garam masala, tumeric, cinnamon, zaatar, cumin, red pepper flakes, marjoram, parsley, mint, and all-spice. The outer casing consisted of bulger wheat, spices, onions, S&P, and vegetable oil for frying.
Shaped the meat first into a mini football and baked. Then stuffed baked football inside the wheat mixture outer casing... again shaped like a lemon or mini football. Then deep fried at 375* for 5-6 minutes until golden brown.
Kafta Kabobs
Pretty much the same ingredients above that were seasoned with spices and wheat used to help bind. Rolled into a slender sausage and used a water-soaked wooden skewer to grill.
Grilled eggplant
Slice 1/2" tick, Salt and let sit for 30 minutes. Eggplant will sweat water. Remove sweat and salt under running water, pat dry, then coat with EVOO. Grill as desired.
Eggplant Hummus
Took several slices of the grilled eggplant and combined then with chickpeas, EVOO, S&P, zaatar, cumin, tahini sauce, lemon juice, garlic, smoked paprika, and sumac. Pulse in food processor for several minutes. Plate and top with EVOO, chick peas, zaatar seasoning, and Kalamata olives.
Tzatziki Sauce
Greek yogurt, sliced cucumber, garlic, S&P, EVOO, mint. Pulse cucumber in food processor. Remove and place in cheese cloth to squeeze out the water content. Add squeezed cucumber in food processor with greek yogurt and above ingredients; pulse until desired consistency. Refrigerate to chill, then plate.
Garnished with some slice cherry tomatoes, purple onions, wedge of lemon, Kalamata olives, hot pickled pepper, and parsley. Planned to make Tabbouleh salad yet ran out of time.
Takeaways from this meal.... the kibbeh and kafta were good, would likely have been better if lamb were used. That grilled eggplant was delicious as it's been a few years since I cooked eggplant. The hummus with eggplant was amazing, comparable to, if not better than the hummus served at Zea.

Late submission which is typical for me, I botched my first entry which was wagyu meatloaf but was able to get different ground meats in time. I consider this one dish so I hope Darla lets it fly, it’s comparable to a sampler plater that many restaurants offer. I had to rush so I bought what I could but the main ingredients speak for themselves.

I would have poured the queso over the tacos, nachos, and enchiladas.

It was still edible but wasn’t being photogenic
@Jax I did put a little queso on everything when eating but not much. I didn't want to take away from the meats which are delicious, If you’ve never had elk or axis I highly recommend it

Here's my not submission now that entries have long since closed. I wasn't able to make the dish in time and didn't plan on posting. But, my wife said I should since it's the closest I've come to recreating a Rama dish.
Basil Pork
Grind pork loin.
Stir fry vegetables and add pork. Cook until pork is cooked through. Add sauce and cook down.
Remove from heat, let cool a bit and fold in basil
Serve!
