And to the OP naming the dog Stella! because you would be hollering-my neighbor named his lab Taxi. So when I sit on my front balcony at night drinking my scotch trying to enjoy the quiet of the evening I always hear "Taxi! Taxi! Get your arse over here!"

I'd rather rub my arse with a wasp nest than to hear that all the time.

Sorry to hijack. I went to Stella once and it was very well done.

Michelin has never been in Nola since I've been alive because there is not enough restaurants of the caliber of food/decor/service/wine:basically everything under the sun to merit the honors. His place at least could've been worthy of 1 star. I think square root is going after the same concept. The pass of pass and provisions and oxheart I feel have the same goal of hopefully bringing Michelin to Houston. I likened the food there to many other Michelin caliber places honestly...exotic arrays of flavors and cooking techniques presented like a masterpiece. Easily the best meal I have ever had in Louisiana in terms of the work of the chefs, somm, service, and ambiance.

I find that really interesting, considering the rich culinary history of the city.

I miss Stella! and have been there multiple times. The ironic thing is that Boswell spent thousands of dollars to renovate the restaurant just before it closed. I miss the duck five ways dish.

If Stella! Was in a nyc or san fran and assuming it was same place, it would get more than 1 michelin. This isnt a validation of stella per se, but more a repudiation of michelin in the states

I don't mind forgetting the exclamation mark since it is unusual to have in a restaurant name but adding an apostrophe and "s" to reataurants that don't have it drives me nuts. Not every restaurant is a possessive noun.

My grandpa used to say "the WalMarts"

Yep. Its staff to diner ratio, decor, style of food, price, and wine list. Check enough boxes and you can get 3 stars in America If you are a big enough city.

Compare to France where you can have a 3 star spot in a town of 600
