Steaming a large quantity of jumbo crab legs

How best to steam a large quantity of crab legs?

I have a double jet burner and an 80 quart pot. This should work right?

How do I keep the legs out of the water?

Usually I steam them in a roasting pan with a bit of water on the stove tented with foil. But I need a larger quantity that that will hold. I could go in batches, but would prefer not to.

Yeah I was going to say put some empty cans on bottom.

I would worry about the risk of the can exploding if it's sealed.

Definitely empty.

FWIW, you can boil sweetened condensed milk 3-4 hours. Pop the lid, you have great caramel sauce.

Get some crab boil. Get the water boiling, do corn and potatoes, then remove that. Let the water cool down but while still hot, drop the legs in. They will warm through and be spicy. Much better than steaming.

King crab legs are already cooked.

They won't absorb any flavor for the minute or two they're submerged in water. It's up for debate if they would even take the flavor through the shell soaking longer anyway.

They do when you place them in warm to hottish water to soak for several minutes. That’s how I prefer king and snow crab legs, with that bit of liquid boil kick.

I agree with the other folks suggesting a prop plan for your steam basket.

I just did some in my steam oven with some clarified butter I made and it was great. Delicate sweet meet and that butter is a classic. I did say next time I’d try dipping them in a crawfish boil type mix to see how that is.

As for steaming use your pot with a few inches of water and a couple bricks to prop the basket out of the water. Or empty cans. Anything that won’t melt or pop.

I have heard of people putting salt or seasoning in the water when they steam but IDK how effective that would be...maybe that will be my third way doing them at home. I bought a 30lb box of king crab clusters from Sysco so I have a few to try

Put a metal colander in bottom of pot. Allows for more flavored water to steam.
