Stay at Home cooking- I have run out of ideas.

usually we cook the usuals and eat out many times a week.

It has been 2 months and I am tired of the usual...but we are working at home and doing projects so I still need fairly simple things.

What are your favorites?

Do a Mississippi roast in the slow cooker, adding carrots and potatoes.

With the leftovers, dice two cups of roast, and about 3 cups of the vegetables (adding some green peas), mixing with the leftover gravy. Ladle mixture into deep dish pie crust, and top with a second pie crust. Cut slits into top for steam and bake for 30 - 35 mins at 425.

(It doesn't have to be a Mississippi roast. Any method that you make a pot roast will work.)

Simple basics-
Get creative with burgers , change your combinations

Sauces are infinite , try using different sauces with your usual chicken or seafood

Change up your sides - add onions when you didn’t before , or bacon or jalapeños. adding meat to vegetables works too. Ground meat in bbq beans works. Shrimp added to white beans is a game changer.

Do you broil, bake, grill, fry, sauté, smother, braise?
What are your “usuals”?

We seem to punt to tacos. So easy to keep the ingredients and vary the protein

As the weather heats up, I shift into summer mode of things that can be served cold or wi5 minimal cooking. I start eating plenty of entree salads garnished with a protein, or chopped salads with plenty of cheese as the protein element.
Chicken salad (Boil or poach the chicken, takes 20 mins)
Egg salad
Tuna salad
Any of the above, stuffed into a halved tomato or avocado
Devilled eggs served alongside a salad
Black bean salad with corn and diced avocado, etc
Charcuterie plate: cold meats and cheeses and fresh fruit, with crusty bread or crackers.
Gazpacho
Shrimp remoulade or shrimp salad
Hummus and veggies to dip in lieu of bread

Regular ol deli meat white bread sandwiches can be made more interesting by pressing and serving hot (don’t need a fancy press, just put them in a skillet to toast with a weight on top: I use a cast iron skillet as a press.

Another idea with leftover roast is quesadillas. Saute some diced onions and red bell pepper, crisping up some of the diced leftover roast before using as filling for quesadillas. Or leftover rotisserie chicken quesadillas.

Leftover pork, chicken, or beef can be used to make a Thai curry. Keep some coconut milk and prepared red or green curry paste on hand and you're almost there, just need a few veggies, like maybe mushrooms, zucchini or squash.

A simple way I challenge myself is to only buy what's on sale at the grocery. Forces me to buy different things.

Yall are awesome for answering me! Thanks everyone.

A lot of these I already do though so maybe I have too many usuals

I don't fry normally but I was thinking I may try it this week and my husband quits grilling at 90 degrees with 80% humidity.

Part of the problem is I am a huge veggie eater and he is not (this is not an issue when we eat out) but I am cooking too many things at home so we are both getting what we want.

Cook fish, shrimp, shellfish, and such. I feel like a lot of people are intimidated or simply forget to cook or grab it at the grocery and opt for what they are more comfortable with - poultry, beef, and pork.

Also, you can consider some wild game for protein - deer, duck, rabbit, and so on.

I am grateful for the beef pie recipe Darla. I saw your pic of it a while back and was curious because I usually only do chicken pot pie.

Hubs also eats no seafood so I think I discovered the problem. I am probably bored of the overload of meats and carbs.

We do eat duck, deer, and lamb. I haven't had rabbit since I was a kid.

Risottos pair well with a lean proteins such as baked or grilled chicken and pork loin.

You can also make them with fresh grown herbs and mushrooms.

Frittatas can be put together quickly with leftover veggies.

A charcuterie board of sausages, cheeses, olives, and thin sliced meats is a nice treat.

Try making beef burgandy. It's pretty easy and amazingly delicious.

I like putting a whole chicken on the pit. Can cut and feed the family with a couple sides. Depending on how much is left, I throw the leftovers in homemade taco seasoning and make chicken quesadillas.

A pork tenderloin is easy to throw in the oven.

Salmon and asparagus is a good meal as well

Burgers, tacos, spaghetti.

This is our normal rotation
