One of my favorite dishes in the summer is a wheatberry salad with chopped vegetables and a citrusy dressing.

Same, tacos is always the quick fall back. Can also put some meat in the pressure cooker if I don't want ground. Also advocado, corn, or whatever laying around.

Stuffed Bellpeppers (Smoked preferrably)
1.5 lbs of ground pork, 1.5 lbs of ground beef, about 10 bellpeppers of mixed colors. Brown the meat and season pretty heavily. Once brown remove and put in mixing bowl. Saute 1 chopped onion, diced up bellpepper tops, and garlic, then put in mixing bowl. Take 1 cup of cooked jasmine rice and put in mixing bowl. Add 1 bag of shredded italian cheese to mixing bowl and mix all ingredients. Season to taste. Fill bellpeppers with mixture.
I prefer to put them on the smoker for about 1 hour at 275, but you can put them in the oven for 30 minutes at 350 also. With about 10 minutes left I top them with shredded mozzarella. The key is the ground pork and italian cheese mixed through.

We did spaghetti and meatballs for dinner the other night. I went and got some bread and mozzarella and using the leftover meatballs have been eating meatball subs.
My point being, think of creative ways to repurpose your leftovers to add a little variety without much work.
