Squid ink pasta

Had it at delmanico in NOLA and wife loved it. Where else in NOLA or St. Tammany can we try it?

Also, it is easy to make. Just add squid ink to regular ole' egg pasta. (in general, making homemade egg pasta is a lot easier than people think it is).

The squid ink pasta at Mariza is excellent. As much as I like Domenica's, I think Mariza's is better.

I had it at August when I got their degustation menu. That changes all the time so I don't know how often they come back to that dish but I can tell you it was delicious!

Does the ink really significantly change the flavor, or just color it?

If you're interested in making dishes with it at home you can go to Dryades market and pick up some squid ink pasta to cook at home.

Yes and no, oddly enough.

While it doesn't really change the flavor on the tongue, it has a fairly strong scent that introduces an earthiness that adds depth to the dish in a way I find pleasant.
