Have to narrow it down b/c there are so many types of sausage. Try doing just smoked pork sausage first (Bourque's/Don's/Best Stop/Kartchner's/Janise's (Sunset)/Rod's (Church Point)/Teet's (Ville Platte) ?
You did a great job w/ the boudin and fish sandwiches, I would be interested to see how this fares.
On a side note, I tried this just to see if it was worth it, good Lord was it good !

sure, there are plenty of stops incuding LaPlace and plenty of sausage options. I made a sausage run to Jacobs recently and got a ton, and the pepper jack smoked sausage so far is my favorite

I have to say I agree with you. I wouldn't put it in dishes, but stand alone sausage this stuff is amazing. I will try Bourque's next.
