I am so disappointed with any of the mustards I've tried lately. Do they go flat? Can you recommend a good spicy brown mustard? I like kinda coarse ground.

I like Gulden's, but it's really nothing special and probably won't solve the problem I think you're having.

If by flat, you mean it loses its punch, I'm afraid there's not much you can do. The compounds that give mustards, especially brown mustards and less processed mustards that are meant to be more pungent, its kick and bite are volatile and break down fairly quickly over time. Getting milder is something that just happens to mustard over time.

You may consider making your own. It's stupid easy. It's basically just mustard seeds, water, maybe some kind of sugar, and some kind of acid all blended together to the consistency you want. Also, freshly prepared is going to be WAY more aggressive than what you can buy in a jar and, again, will mellow over time. You may find a recipe you like better than what you can buy that you can make fresh as needed.

You keep them in the fridge? Might zap some of the flavor over time.

Buy the powdered English Mustard. That's some potent stuff.

Why don't you give Coleman's dry mustard a try? It has a nice bite to it.

Not trying to be funny but my current fave is Kroger brand horseradish creole mustard. I could drink that stuff with a bag of pretzels.

Besides Zatarain's I haven't found a "spicy" brown mustard. Most of it is really mild.

this was my favorite, until they put it in plastic containers(even wrote to the company), so I search for the little glass jar, which doesn't seem potent anymore!
