What do I do with this? I've heard of it and seen them make it on TV, but I've never had any. Any recipes or preparation ideas?

I like to put it in a water bath at 128 for 4.5 hours. I call it Souse Vide. Really good.

When I've had it, it was the same as hog head cheese, but not seasoned as well ... and a vinegar taste.

Ingredients sound like a yankee version of head cheese. Let it get to room temp, spread it on a saltine cracker, eat away

Put it on the dash of your truck...around noon it will be ready. All you need is a pack of saltine crackers and a bottle of hot sauce. Beer in warm weather...straight bourbon when cold to wash it down.
