Sous Vide breakfast egg cups

Any of y’all Sous Vide users ever made the egg cups similar to what Starbucks sells..?

Which recipe did you use and did they turn out well? Seems like a great quick low carb breakfast.

I've done the ChefSteps recipe for this on several occasions. I like them. Although I use cottage cheese and the cottage cheese does overwhelm everything else to the point that it seems like you are just eating cottage cheese.

I’ve seen some using heavy cream, cream cheese, and cottage cheese... I think I’ll try heavy cream first.

Heavy cream was certainly richer

cream cheese might work, give it a tang

I do them with cottage cheese and grated gruyer. Put some protein in the bottom of the cup before pouring the egg mixture in

I make eggs a number of ways for the week on most Sundays. Definitely gonna try this out.

Did a batch this afternoon.

12 eggs
1 cup heavy cream
Bacon and shredded cheese
Salt, pepper, paprika, garlic and onion powder
172 x 60 min

Pretty damn good... will cut back a little on the cream next time though. Looking forward to different variations for sure.

I'm always looking for better breakfasts that I can cook at work and I tried to make these..they were pretty good, the only issue I had was reheating them. I have a toaster oven at work and it didn't work very well to cook them in there, so if anyone has ideas other than the microwave I'd love to hear them, as it was really convenient to throw them in the fridge at work.

Just wondering, but would you consider this better than just putting them in a pot at a simmer? Or is this just easier?

I don’t bother with sous vide or a pot at a simmer....just bake at 350ish until the egg is as set as you like. Use a flat paper tart pan liner, and cleanup is nil. No scrubbing egg out of any containers.
