Soup Recommendations?

Hey everyone. I have a friend who was recently diagnosed with cancer of the esophagus. He can only eat "smooth" foods right now (nothing that can get caught going down his throat), so I'm looking for soup recipes that can be blended until they have a smooth consistency. I've been making him a butternut squash soup that I finish in my food processor--but that's kind of it in terms of my smooth soup repertoire. I would appreciate any of y'alls recommendations. Thank you so much!

You can make a potato/leek or broccoli/cheese and puree them too. I usually do that for potato/leek, and it can be done to the broccoli cheese to chop up the small pieces of broccoli usually left whole.

You are kind, that’s an ugly diagnosis.
Any vegetable can be roasted on a sheet pan and puréed into a soup. I like to take chunks off pumpkin, toss with a little ginger and turmeric and EVOO, then spread on a sheet pan with some sliced onions and a couple garlic cloves. Roast in oven until soft and beginning to brown in spots. The same technique can be used for cauliflower, broccoli, sweet potatoes, sweet red peppers, carrots, etc.
Smoothies can pack lots of flavor and calories if he’s losing weight. Peanut butter, banana, Greek yogurt, cocoa powder is a nice combo. Maybe gift him with a little Ninja personal blender and some bags of frozen fruit or fruit purées.

Gumbo2176, Both sound fantastic. I will head out now to get leeks and broccoli. Thank you.

Thank you, Hungryone. Adding pumpkin, sweet potato and cauliflower to the shopping list now. I made two gallons of chicken stock last night to get ready for my soup cooking marathon. I want to try to get some good nutrition/calories in him, and your suggestions really hit that mark.
Hadn't even thought of smoothies--perfect. And yes, it is an ugly diagnosis. He's still trying to process it and is having a tough time. I'm taking him to his appointment Monday at Duke to see what the treatment options/plan will be. Thanks again for your help.

The Panera bread potato soup is a beast and can easily be blended to smooth.
Chicken broth, potatoes, cream cheese, season salt, white pepper, and garlic powder. I add Tasso for Smokey flavor. I would still add it but take it out cause it won’t blend well.

Jib, We need a beast, so I'll be making it--sounds wonderful. Thanks again.

Thank again to everyone--incredibly helpful suggestions, and incredibly kind to reply early in the morning on game day and during Thanksgiving week preparations. I will post some pictures of your wonderful recipes. Off to the store.

You sound like a thoughtful friend. He’s lucky to have you.
I am a sucker for tomato soup. I like to take a ton of Roma tomatoes (way more than you think), half the lengthwise, and roast in the oven. Also some onion and garlic on the roasting pan. Purée them all with some stock. Add heavy cream at the end until your preferred level of richness.

OMG the tomato basil soup at La Madeline is out of this world!

Kenji has some good tomato soup recipes on Serious Eats that you puree in the blender. He uses bread and no cream to get a creamy texture without all the fat/calories.

If making larger quantities of hot soup, I'd recommend an immersion blender instead of a stand blender.
You dont have to let the soup cool before blending and it's so much easier.

LL, your tomato soup is up next. Any rough idea on the amount of tomatoes? My plan is to cook all weekend and stock his refrigerator and freezer. Thank you so much--I've always admired your WFDT pics. Thanks again, Laura

Kosmo, you actually read my mind. I've never made many blended soups before, and the process in the food processor is really clumsy and awkward. I'm ordering one this weekend from Amazon, given the amount of soup I'll be making in the next little while. Any suggestions? Thanks again.

I bought 3# of tomatoes last time and it made enough for 3-5 dinner portions. It’s surprising how many you need. But I’d say whatever you can fit on your sheet pan :)

Wonderful. Thank you, LL <3

Butternut squash soup is one of my favorites.

Mine too, Tigertown--and that's the only one I've been making (and really know how to make well). So he's had an awful lot of it. That's why I came to my experts for some suggestions on other nutritious soups that could be blended. Everyone has been amazingly helpful and kind.

Ya I didn’t really have suggestions. I was just acknowledging that I like it too.

I have a cheap Cuisinart, it does fine.
You're a kind person, thanks for giving back!
