I missed your first post! So all five tomorrow. This situation with pureeing in the food processor is just a sloppy pain. Hoping Amazon can deliver the immersion blender before 9:00 tomorrow night. I think the alcohol in the red wine will be ok because (I believe) it cooks out. Love your spices and aromatics, gris gris. I'm going to have to make another couple of gallons of chicken stock tonight during the game. Thank you!

Head out to get the shrimp for the bisque here shortly, gris gris. Sounds wonderful and my friend loves shrimp.

Hungry,

After looking at some reviews online, seems like Jeni's is the best super premium vanilla ice cream at the stores here and has a very high fat content. Getting that on this morning's shopping trip. In terms of booze, he loves small batch bourbon--does that sound like a good whiskey to add? Any personal favorites he might get a kick out of? ABC stores are closed today because it's Sunday.

Thanks, Laura

LL,

Getting 3 lbs of Romas this morning on my store run. Changing stores from yesterday, because the Romas didn't look great.

Thanks again,

I use the immersion blender whenever I can. Much quicker, and simple cleanup.

But two things:

1. Make sure it stays immersed. If it is only partially under, you may find yourself wiping soup off the walls.

2. If it jams, unplug before trying to clear items from around the blade. People have a tendency to grip it and hit the on button while doing that, and pics of mangled fingers are often seen online.

Here's an article by a guy who did it, complete with awful pics. Why I Stuck My Finger in a Blender

Twenty,

Thanks for tip and the cautionary tale--sounds like a clutzy move I'd make.

Liz,

This is an amazing place full of wonderfully kind people. I'm new here, but everyone has treated me like family. My friend (Mike) ate so well last night (thanks Gumbo2176 and Hungryone) and said to please thank y'all. Today I'm making Louisiana Lady's tomato soup and Gris Gris' shrimp bisque. I'm just going to keep cooking, and I'm so grateful for this board.

If he likes bourbon, give the man bourbon! Goes well with salted caramel ice cream, too.
Dunno if I would put small batch bourbon blended into a milkshake, somehow seems over the top. maybe use it as a floater on top where it can be more directly appreciated?

Your care and concern during Thanksgiving season remind us to count our own blessings.

Other non chunky wonderful liquid/soft things to eat: freshly squeezed OJ, soft serve tangy frozen Greek yogurt (like Pinkberry et al), a schmear of homemade chicken liver pate eaten off of a spoon, chocolate mousse spiked with a little rum, cheese souffle (can scoop the insides and skip the crustier bits), a homemade aspic or savory gelatin (see if some of that chicken stock you made will set up into a gel). Savory gelatin seems weird until you’re desperate to chew something, anything, after too long on a liquid diet.

Chocolate mousse has me now thinking about flan. Yes, flan. And panna cotta!

Hungry,

You're doing a great job here of opening my mind to new possibilities. He loves good food. Chocolate mousse!! And I'll pick up some salted caramel Jeni's ice cream too. And regular bourbon with a small batch floater makes sense. Savory gelatin sounds perfect honestly--I hope my stock will set. It usually does, anyway. Your Boozy Milkshake idea made him smile last night.

Liz,

Thank you but it's you folks who have come through for me. I had one blended soup recipe before yesterday and now I have more than I can count. Other great ideas too--from boozy milkshakes to immersion blenders. I'm off all week so I can just keep following the Board's suggestions. My friend's parents have both passed, and he was an only child, but we have our biological families and our chosen families, right?

gris gris,

I couldn't find shrimp with heads on at the store this morning--they said because of Thanksgiving, they're offering mostly peeled and precooked options :( Is it ok if I only use the shells for your shrimp bisque?

Thanks,

Laura

The chosen ones are the best!!! I wish I had a recipe to share, but these TD'ers got you covered. I hope you and your friend have a great Thanksgiving!

Have had some experience in caring for loved ones with restricted swallowing, whether due to motor neuron disease, radiation, surgery, etc. Too often, the medical professionals say, “soft diet” and toss you out of their offices. And the medical nutritionists I’ve had the misfortune to encounter are NOT culinarians. Too many dietitians *don’t* actually like food, or are not proficient cooks.

He needs calories, and a balanced diet. There is zero medical reason that those calories have to come in the form of supplements, shitty tasting food, or miserable purées. The world is full of soft and delicious things.
-Feta or extra sharp cheddar melting on a soft boiled egg, eaten with a sterling spoon.
-Rice pudding, drizzled with caramel sauce.
-Saag paneer, with the paneer well-mashed with a fork.
-Mashed roasted cauliflower
-Tuscan style ribollita (bread soup w beans and tomatoes), puréed
-Popeyes mashed potatoes and gravy, with extra gravy stirred in

If you have a Trader Joe’s nearby, check out their boxed soups. Carrot/ginger, miso, roasted red pepper: you can stock his pantry with some ready to heat boxed smooth soups for the days when everything else is just too much trouble.

Thanks, gris gris. Mike (my friend) told me last night that shrimp bisque is his all time favorite.

He may prefer the more traditional cream bisque. Look in the soup section of the TD recipe book in the sticky at the top of the page. I have a crawfish bisque recipe there. You can sub shrimp. You can also purée the entire soup. Sometimes I add a little sherry, brandy or whit wine to it.

Potato, leek, and spinach vichyssoise

Both wonderful.
