I am going to boil some, I am just concerned with the crawfish seasoning overpowering the sweetness of the meat...

We boil them every year in Florida. Get them shipped to the condo. Season the crap out of the boil water, just like you would do for Shrimp.

Overseason and soak less? I normally overseason shrimp and crabs compared to crawfish and soak less. Both powder and liquid. 5 minute boil?
I asked how long the season lasted and he said they fish year round. I got my tracking number, hopefully it isn't 20 live crawfish in the shipment...

Ups delivered them to the FIL's house late on Friday. I was on the road for work all day so I had them shipped there. He said that all were healthy and good size. He added some more gel packs to keep them cool till cooking...

This guy is about to get some Lousiana business. I was watching this thread waiting to see ho it went. It looks like we are having a big Lobster Boil next weekend. I wonder how long the season is? I would love to order more in time for tailgating.

A lobster's shell is very tight, not much seasoning will get through the shell to the meat. Kind of like boiling fat crabs.
They will be great!

They are available year round. Certain times of the year they will have mostly new shells(or soft shells-even though with lobsters the new shells don't have the same feel as a soft shell crab-it is a thicker soft shell than crabs and still somewhat hard to the touch). New shells typically die easier and have less meat than hard shells. A new shell lobster shell is paper thin and can die by its shell getting punctured. This can happen pretty easily if you drop it(even a foot high can do it)or puncture it with a net.

Well... in the ocean they are watertight. Except for the water they take in through their gills. But like crabs, the connective tissue breaks down somewhat in the boil. eg: overcooking a crab and the legs and claws will fall off.
And the fuller the crab, less water inside the shell and less seasoning. The skinny crabs are always more highly seasoned.
I've boiled lobster like crabs/crawfish maybe three times and a little pepper and salt seeps into the shell, not much.

I grilled some with butter basting every couple of minutes and boiled the rest. I seasoned the water heavy and the lobsters still picked very up little seasoning. Both were good, but the grilled were my favorite...

Looks like some nice lobsters. You definitely got a deal at $7.16/lb. Even restaurant depot is not that low right now I think. You probably couldn't even buy them wholesale that cheap right now.
