Whatever... I have about 50 of them. I’ve had a lot of them for 30 years. Send some back every year for free sharpening.

You can make literally any knife as sharp as you want. Sharpness is nothing but an angle; there’s no magic property other than the angle making something sharp. Holding the edge is the problem.

I actually have nothing to add to OP just wanted to get on my soapbox for 2 secs

Had a set about 25 years myself.

Sent a bunch of them back to New York for resharpening (for free, except for shipping), and they sent me back a few resharpened knives, and just replaced all the rest for free.

Can't beat that. But damn, you realize how long you have been struggling with a dull knife when you get a freshly sharpened one.

My wife loves to throw them in the dishwasher. Then wonders why her tomato is like cutting a sponge.

All the fancy knife manufacturers say "hand wash only".

But who really does that?

I want my dishes and utensils to go through high heat washing and sanitization, after our already considerable pre-washing.

I’ve got a section that I keep a few various knives in that she doesn’t use and they don’t go through the dishwasher.

Why do you hate your hands? A dull knife will send you to the emergency room. A knife in a dishwasher is a dull knife.
