Someone needs to post recipes for snakeheads now that they are invasive.

Cook it like any other fish. Fry it or broil it with a ton of garlic butter and blackening seasoning.

Do we have the Asian Carp in Louisiana yet? I heard those are a challenge to make palatable.

Guess what Louisiana delicacy is or was in the past considered an invasive species in Egypt?

Louisiana red claw swamp crawfish.... Go figure! What a great thing to invade a country

I've read that snakehead closely resembles Choupique. I've never cooked choupique before, wondering if you can filet them or if they are more flaky like a gar and you have to make balls/patties with them?

Yep. We have them in the Atchafalaya area. The meat is fine to eat but they are really really bony.

If you don’t filet them right out of the water the flesh gets soft. If you wait too long it looks like mashed potatoes.

I’ve never eaten it, so I can’t say if it tastes good or not.

I used them before to make faux crab cakes. I cleaned the fish and put them in cheese cloth to boil in water seasoned with seafood boil just long enough to cook the meat and lightly season it.

Picked it off the bone and mixed it with mashed potatoes and lots of cut up seasonings, breaded them and then fried them till golden brown. Pretty damn good that way.
