Smothered Pork Chops Recipe

I saw in the pork chop ideas thread that several people recommended smothered pork chops with gravy over rice...
This sounds like a perfect dish to make for this weekend to ride out the hurricane...so hit me with your favorite recipes.
(I've already pulled the ones from the sticky at the top)

If I was going to die, I would want a nice steak for my last meal.
Brown seasoned chops on both sides in some bacon grease over high heat. Remove.
Add onion, bell pepper. I add salt now to help sweat onions. Scrape bottom of pan. After about 5 minutes, sprinkle a tablespoon or so of flour and stir frequent to keep from burning.
Add water or stock. About 4 cups or so. Add garlic, other seasonings, pork chops. Cover. Simmer 20-25 minutes over low heat.
Make some rice.
I probably left some stuff out, but that’s the basic process. Sometimes, I flour the chops before browning.

Same here. Sometimes use country style ribs and add a little roux

Yeah I usually flour them lightly.
Just make sure to brown the shite out of them. That’s where the gravy is gonna come from.

Alright, my grandmother used to smother pork chops, but it would come out almost as a grease gravy. Like no vegetables or flour was used. (sounds disgusting but it's amazing).
She passed away before I was able to learn her ways, so if anybody has some helpful hints i'm all ears.

My wife does this with Kitchen Bouquet. I dont necessarily think the KB is necessary but it doesn't do any harm so no point in complaining.

Yep. This is the same basic method for braising/smothering chicken, making rice and gravy, etc.
Good to be aware if you ever have a protein that you dont know what to do with. I find basic baked chicken to be meh but smothering it entirely changes it.
I didn’t realize until a recent Reddit thread I read that basic smothering wasn’t something people outside of the south know of already.

anybody has some helpful hints
Put enough oil to well cover bottom of Dutch oven, brown seasoned pork chops add a little water and scrape all brown bits until water evaporates. Keep browning and repeat adding water about 6-8 times. It’s a slow process but worth it.

If I want to make just smothered pork chops with rice and gravy, I follow the instructions like on the pork chop and cabbage idea post, except leave the cabbage out and finish the smothered pork chops with green onion tops. You should have plenty brown gravy.. and if you have any leftover gravy, it's good to freeze and add to a pot of peas or beans later on.
