Smoking a pork butt

I'm looking to smoke a 4 pound pork butt too bring to beach for new fourth.

Plan is to smoke it at 225 for about 4 hours than cover and finish in 200 oven over night.

Any tips smoking pros can give me so it remains moist and finishes tender?

Going to put on rub and let it sit in fridge for a day before smoking.

After smoking, I usually put in crock pot with ginger beer and onions. Bbq sauce after you shred.

All butts are different so just make sure you bring along a meat thermometer and cook in the oven until you reach and internal temp of 205*. remove,let cool until yu can handle it and then pull. Add a lil of your rub to it before adding whatever sauce you're using. Enjoy!!!!!

Oh, let it get a good amount of smoke on the grill and as good a bark you can get!

Keep the temp low

Use a little liquid

More wood doesn't equal better. Let your wood burn a little before adding your meat. Don't go crazy adding wood during the smoke

And personally, I don't want to put all the effort into smoking it only to smother it in BBQ sauce, ginger beer, whatever

Thanks yall appreciate the tips.

I plan on shredding it for sandwiches so BBQ will be optional for each person's sandwich.

It's pretty hard to screw one up as far as overcooking. Make sure to brine it (I prefer a dry brine), add your rub, and let the smoke do the work. Four hours should be enough to get a nice smoky flavor. Crutch really need to speed things up but be careful with this too. You don't want mush.

Thanks for that boss, I'll make sure to read up.

You think covering while in oven is best bet? Maybe with a little watered apple juice. Don't want it to dry out.

Haven't smoked anything in forever and it always came out way too smokey. Planning on using pecan wood with a little hickory.

Pecan is too strong for me. I use hickory and smoke for 2 1/2 hrs. I finish it in a pressure cooker for 1 1/2 hrs or 2.

I wouldn't do anything smaller than a 7 or 8 lb butt.

My thoughts exactly. I don't find pecan to be strong at all while hickory is certainly strong.

I use mesquite(I know) for pork butt and I leave it on the smoker until it hits 200. You really don't need sauce when it is smoked well, without shortcuts.

Around the 4th of July, and if the wind is out of the west I can always tell Texans are trying to BBQ. Mesquite smells like the devils arse crack.

That's foolishness. I'm not from Tx, Ive just experimented and found mesquite imparts a stronger, less ashy tasting flavor. I use a lot of Pecan as well. The rest, meh.

I smoke them a little longer, 6-8 hours or so, but never let temp exceed 225. I use hickory or oak, and cherry.

Use a liberal amount of rub of your choice. After I put mine on, I mix a spray bottle of beer and apple cider. Periodically when it's smoking, approximately every hour, I spray the entire butt with this mix, all over. It helps create a nice bark, and good smoke ring.

I take it off, then stick it in the oven on low, 200 degrees or below, all night. Let it cool, and it should pull very easy. If you happen to get your hands on any Montgomery Inn BBQ sauce, it's awesome poured onto this. But I can't find it, except to order on internet.
