Smoking a deboned chicken stuffed with crawfish etouffee

Have any of yall done this?

I’ve always cooked these chickens in the oven. I’ve got one from Rod’s in Church Point in the freezer that I’m thinking of cooking for a quick meal this week, but contemplating cooking it in my offset smoker.

Will it mess up the rice and crawfish flavor? I know the chicken itself would be delicious.

I wouldn't slow cook it with the crawfish ettoufee in it me.

That will be fine, and you'll get some smoke. I cook those stuffed chickens from time to time and thats about the temp I do. But the thought of slow rolling the crawfish/ shrimp stuffed ones gives me pause.

Sounds absolutely terrible! But, I’d try a couple slices, just to make sure, lol…

How do you get ettouffe inside a chicken and keep it there?
