I purchased a CampFire woodwind pellet grill about two years ago and I like it. It does a great job of cooking. However, I’m looking to get a traditional stick burning smoker that can really impart smoke. I’m looking to get the board’s opinion on two things.

1. What style of smoker produces the best results?
2. Which style of smoker does the best job at maintaining temp?

One of those questions is more important than the other regarding a stick burner. If you're wanting a set it and forget it or minimal manipulation of vents to achieve and maintain temperature, then you don't want a stick burner. Then you can compare types of smokers to get an answer to your first question.

May not be a traditional stick burning smoker but the backwoods smoker is great for temperature control.

Pellet.


That said, not all offset smokers are created equal. Generally the cheapest offsets have difficulties maintaining temps due to thinner metal.

You would want 1/4" steel construction at a minimum on an offset and it'll cruise at a pretty steady temp. Granted, you will have to feed the fire every 45-60 minutes. A smoker of that construction will typically be north of $1k though.

It’s not cheap but you can get a DigiQ to maintain temp in your stick burner. Best of both worlds and what I’m gonna do when I don’t live in the middle of a major city

Yeah I meant 1/4" in my original post. But that's as a minimum. The Old Country Brazos is that thickness and runs around $1,200.

But yeah, high end, thicker offsets can get pretty pricey.

So my advice is that if your budget is less than $1k, or you don't feel like feeding a fire once an hour, then go with a pellet.

Look into charcoal gravity fed models. My offset sits unused because I am done baby sitting a smoker.

They are expensive, but Yoder is the closest to what you’re looking for. I have one and I’m pleased with the smoke rings and flavoring I get from mine.

I still prefer my stick burner because of the attention I have to pay to it to get the cook out of it I want.

They are totally different and I still use both depending on how much time I can dedicate to the cook.

Have owned a stick burner. Was a great project for a few years but requires lots of beer drinking to maintain temps and overnight cooks require some monitoring. The most efficient and set and forget smoker I own is the Weber Smoky Mountain bullet smoker. There are 18" and 22" versions. I would strongly suggest the WSM, going the Virtual Weber Bullet forum and smoke on!.

For the money go with a WSM 22 a brisket won’t hardly fit on an 18. Buy a DigiQ to control temp. If you need to cook more food at a time get a Backwoods G2 Chubby. Also buy a DigiQ controller for it.

My Oklahoma Joe Bronco is easy and simple. I don't adjust the vents and it stays pretty steady temp.

Weber Smoker Mountain with an accessory fan and wifi controller is a good option. Also the new gravity series smokers are great options and produce phenomenal food, especially the Masterbuilts. That said, those are smokers you hope give you 4-6 good years, not 20.

If you are willing to spend a few K's you can probably find some reasonable custom built options.

This is nonsense. I have a stick burner that will maintain temp for up to 36 hours with no vent setting or refueling. Almost any fan-controlled, insulated, vertical flow smoker can easily hold the temp necessary for almost any cook.

as i said in my previous post... you might be using an offset stick burner... but you are not stick burning... you are smoldering. This is similar to charcoal.

any charcoal grill can be a great smoker. I have been waiting for the walmart WSM knock offs to go on sale to add it to my grills. They are too expensive for what they are though.
