Do you season them the night before or in the morning before you smoke?

Season them, light up the grill, let grill get to temp, throw the ribs on

I don't think it matters much, but if I have time I season mine the night before.

Remember salt draws moisture out of the meat. I season 30 minutes prior to going on smoker.

I’m an overnighter. Have a 7 lb butt , rubbed and wrapped in fridge now , for tomorrow’s smoke. With a late baste of Bob Gibson’s championship red sauce

I usually rub them down an hour or so before I put them on… I do the bone side… let it sit 20-30 minutes, then flip and do the meat side and let them sit 20-30 minutes before putting them in the smoker

I read somewhere in an article by some famous bbq champion that from a backyard bbq standpoint, either technique is appropriate. He went on to say that “however, every single one of the bbq rib contest champions he has ever met have always seasoned less than an hour before placing on the pit”.

That quote is of course paraphrased and I cannot link but that was the just. Take it for what it is worth.

All the videos I have watched from competition cooks say that they season within an hour of cooking and usually within 30 minutes.

I like to season before I go out to start my fire, So probably and hour or so ahead of time. They should look wet that way you know the seasoning is penetrating the meat. I think I get a better smoke ring that way as well.

Just took it off after 9 hours. Resting now. Gonna be just fine.

It really depends on your rub, and it's sodium content. The higher the sodium, the less time I like it on ribs before it hits the smoker. I apply my base rib rub the night before, because it's on the lower sodium side. Applying early will help with a slight dry brine, but too long and you starting entering the curing stage. Hope this helps.
