Smoked brisket help. Wrapping in foil

I’m smoking brisket on an electric smoker for the first time. My smoker is fairly small so I cut it into 3 pieces. Is wrapping it in foil after a few hours necessary? I started it early this morning and it is currently at 160 degrees right now.

If it has stalled and you need to finish for a certain time, you need to wrap it in foil tightly to prevent evaporative cooling from keeping it stalled.

It stalled for a while right at 155 where I expected and now it’s up to 163

Wrapping in foil is how you make pot roast. I suggest butcher paper.

Curious what you're using TBH. What smoker doesn't allow room for 1 brisket? So much wrong going on in this post.

Yeah there is bark. It’s now at 170 after about 7 hours.

I have a smaller Bradley smoker.

It was a Costco prime brisket, so even after trimming, it was too big. Probably could have done two pieces, but I was able to make the pieces more even after cutting it into three.

If you want bark and a quicker cook you can wrap in foil and then let it rest in butcher paper. You don't have to wrap to get through the stall, you can get through and then when fat is rendered properly you can wrap. May be hard to tell with a brisket that has been cut into 3 pieces though. I would probably wrap that in foil to prevent it from drying out. You won't have the fatty point protecting your lean meat.
