It's a very strange request, but called Whole Foods with no luck, stopped by the Asian Market as a long shot but nothing doing. Rouses also.
Any suggestions?
Brewers are playing the Devil Rays in the World Series, hence the urge to cook skate wings (and drink beer).

Thank you Shexter
I've done research and most recipes steer towards a lemon butter caper sauce. Saw one with a panko coating which intrigued me.
Wanted to host a World Series party featuring Milwaukee micro brews and Grilled Tampa Bay "Devil Rays". Maybe we'll just get drunk.
Looks like the Devil Rays won't be showing up to the party.

Good lookin’ piece of meat! I guess similar to Snapper “throats”, my new favorite thanks to Panini Pete @ Sunset Pointe in Fairhope…

The late Rene Bajeux used to do a killer version of this.
I’ve had it a couple of other places to see if anyone could replicate it like him, and it has been a slimy mess.

Skate Wing
I took my experience with it and would occasionally feature Skate Picatta, Skate Marsala, and Skate Putanesca on an italian menu.
I love skate!

People skin them and use a 1inch piece of metal conduit to punch out little "scallops" out of them and cook them like any other scallop. I've never had it, but sounds good.

Where can I source them? I'm not used to living in the sticks.

Good luck finding it OP I’m sorry I have no suggestions to help.
I’m not sure I’ve ever seen it in the states. I had it in Kent England, lightly floured and then basically a picatta: lemon, capers, and brown butter.
It was fricking incredible. Beers may have helped, to be fair.
It was basically like an extremely firm fish. Stringy could be used, sure.
I’ve tried it a couple times
Myself and this makes me want to try it again. I’ve never down it well
