Simple egg fried rice recipe

I can’t recall who it was but someone on here asked for my egg fried rice recipe. I made this last night and here’s my favorite version. You need:
2 Tbsp of bacon fat/lard/oil
2 cracked eggs in a small bowl
2 cups of day old white rice
1 large clove of garlic chopped
1 stalk of scallion chopped
chicken bouillon powder or salt to taste
high heat a wok or pan and add 2 tablespoons of render bacon fat. I use Bacon Up brand. I’ve also used lard and oil before and rendered bacon fat>lard>oil.
Wait till you see smoke coming out of the pan an add the eggs.
Scramble the eggs for 5 seconds. Add chopped garlic.
Stir around eggs and garlic for about 10 seconds. Add rice.
Use a ladle or spatula to break up the rice. Make sure the rice granules are coated by the bacon fat. Stir for a minute or so. Lower the heat and season the rice. I’ve seasoned this dish with salt/fish sauce/soy sauce/chicken bouillon powder individually and in various combinations. IMO the best is just the powder. I use Lee Kum Lee brand.
After you’re ok with the taste, add the chopped green scallions. Stir about a little bit to make the chopped scallions wilt a bit. Turn off heat and plate rice.
Good, cheap and easy to make.

Thanks for sharing. Interesting there is no sesame oil. I was always told that's what makes it.

When I make my other fried rice like shrimp or combination, I finish it off with a sesame oil drizzle. The egg fried rice is a simple fried rice where sesame oil is not necessary.

Instead of the bouillon powder or salt, maybe add a little soy sauce for saltiness, umami and, last but not least, the looks of cheap Chinese take-out fried rice.

Looks delicious.
My students made this recently. My technique is slightly different because we do not have woks and we included the bacon in the final product. Very similar recipe, give or take a couple of ingredients but similarly simple.
They were shocked at how simple it is to make.

I did my first shrimp fried rice recently...have done it twice since. Fantastic and easy.

It is one of my favorite quick dishes to make. Simple and delicious.
My Cajun MIL says she's been eating egg fried rice since she was little and for most of her life, she didn't know it was a Chinese dish. The flavorings are different but basically the same thing.
Not sure if it is just a thing her family did or if it's common in Cajun cooking. She's from SW LA rice country.

Just ordered some to try.
I'm a big fan of adding soy sauce, oyster sauce, and a little schewan and red pepper.

Not necessary for the high smoke point, but I'd still use it for the flavor. Just a personal preference.
