Everyone raves about the Silver Moon because it was a momma cooking soul food from the heart out of kitchen like a house and not a restaurant. That was the appeal and what made it beloved.

And if course the quality of the food.

Now y'all are shocked that this same sweet old lady, after being asked repeatedly to make a cookbook, created an amateur cookbook based on recipes she probably never measured in her entire life?

I’m shocked? I think she was taken advantage of. Frankly I don’t even care though. I just wish I could relive the experience.

Bon appetit!

Her 2012 cookbook recipes. As far as cornbread the closest thing in her cookbook is the broccoli corn bread.

Hog lard, margarine, white beans, water, salt and pepper. You're welcome.

Thanks for posting these.

What does "simmer 1 1/2 chopped ingredients" mean??? It's in both the white beans and red beans recipes. I assume it just means sauté all the chopped vegetables, but why "1 1/2"?

split the chopped veg into two piles. Simmer with one pile and half the other, then add the remaining 1/2 pile at the end

Is this common? I've never heard of this method of cooking down vegetables.

the cooked vegetables melt into the beans and the raw vegetables add some texture.

Prudhomme often layered vegetables into his gumbos and other dishes.

And why not just say three quarters instead of one and a half chopped vegetables?

I think that was her way of writing "one half". Turn the number 1 to one, and it will make sense.

Your brain is trying to making it "one and a half" something because that is the style of modern recipes you have read in cookbooks, but you have to back off and read it literally.

Ahhhh, that makes a lot more sense. I bet you are right. I was just wondering if saying "one and a half chopped" was some sort of old school southern thing.

I think it's just an omission of "cups". I see recipes all the time where they omit a unit of measure, or mix up tablespoon and teaspoon abbreviations.

So, I believe she meant 1 1/2 cups in at that time and the remainder in at another. Either way, the fact that these recipes omit meat altogether, is hardly a "recipe".
