Shrimp that don't peel

I follow the stale cracker method, or at least I think I do, but I still have issues with the shrimp not peeling sometimes. Any ideas or suggestions?

If they are caught at the wrong time in the molt cycle or improperly handled before they get to you, no cook method can make them peel easy.

Two pots....boil in one, season and soak in the other. It's worked for me...butI don't always go to this much trouble.

There are numerous methods purported to keep that from happening but the most important thing is to not overcook. So your water needs to be dangerously overseasoned and your actual cook time as short as possible.
I shut the fire off after the drop and just let the soak do the cooking. Also add a bag of ice to cool it off a bit. Still, sometimes it’s a crapshoot

Want perfectly peeling shrimp?
NO SALT in your boil water. After shrimp are cooked; AFTER boil water temperature is Well Above boiling temperature then add the Salt.
Taste shrimp in soak water till your desired taste.
***Salt in boil water can turn shrimp peels to paper machete.

Just wondering do you have a better description of the shrimp shells that don't peel ?

I'd start almost anywhere other than a large metal blade.

Make sure to spread them out when they're finished so they don't continue to cook. More often than not, the shrimp that are piled up at the bottom are a little overcooked and tough to peel.
