Shaya - Big Ol' Price Jumps Already

Morning Everyone,
Since I'm going back to Shaya this weekend, I took a look at the menu yesterday, just to get reacquainted with all of the different stuff.
I was there in May, and thought I noticed a couple of price differences, but then I looked closer:

Does anybody ever remember price jumps like this in such a short amount of time? It's 30-50% in some cases!
Regular hummus went from $6 to $9, cauliflower hummus $8 to $12, and a bunch of other stuff went up.
A few things did stay the same, but I gotta wonder if all this great press might have "inspired" the star of the show.

supply and demand, demand has been so high since it opened. A lot of places raise prices on sides and apps a few months after successful openings.
(I still haven't been to Shaya yet, always booked on Open table when I check)
$9 is a lot for Hummus, I can get a giant container of Sabra from Restaurant Depot for $9 and make more than a dozen servings.

We went 2 weekends ago. Food was fantastic but it was not the great deal I had heard previously

Chicken salad went from $10 to $14. That's a pretty freakin' steep increase.

Similar price hike happened at Domenica. First time I had the Cauliflower it was a "hey try this" free offering. Eventually it went to $18.
Taste the hummus at Shaya and then compare it to whatever Sabra is. The taste and texture and pita bread (which is free) is worth it.
I swear half the people on this board dont understand the business of restaurants.
PS similar price hikes happen at restaurants everywhere and often. Look at steakhouses, they cant jack up prices on beef much, so a $1 martini becomes a $15 drink.

Gradual price increases over a certain amount of time are understood. What I'm wondering about are these drastic increases over such a short amount of time - and whether it's much more about being worshipped in the press, as opposed to the restaurant owner constantly being oppressed by rising costs.

The added line was in jest. if you don't know what Sabra is, then you must not be a fan of Hummus at home.
It wasn't totally serious, but bean dip for $9 seems high from the outside looking in.

Its probably increases in labor costs and pricing in the free pita, if anything. Get press, get busy, suddenly you need 4 am prep cooks instead of 2, etc...

Better to raise your prices to where you want once you know you will be a success when many people have still not tried the restaurant. They likely don't have much established regulars yet to notice or complain about the price increases. Most restaurants open with depressed prices on apps/sides as someone else said.

I know what Sabra is, I wouldnt call it hummus.
I like to make Hummus at home. When I do, it probably costs me about $10 bucks. Beans, tahini, lemons, pita, etc...granted a restaurant has economies of scale, I dont but still not far off. Especially since I dont pay labor, insurance, advertising, etc...
And he is baking his own pita and giving it away for free.

Just go to 1,000 Figs off Esplanade Ave. if you're looking to eat the same type of food on the reg. Plus, it's BYOB and no corkage fees.

I meant to put free in quotes. Obviously cost of pita is included in dishes, but since people arent charged for it, they consider it free.

It's still reasonable, but the prices definitely aren't "quick lunch" compatible anymore. But it makes sense that they had good prices to get people in the door and get good word of mouth before they raised them. I'll be interested to see what the prices are in a year.
