Look in the stickied food challenge thread for the soup challenge. Got Blaze posted one. He subbed alligator meat, but it’s a turtle soup recipe.

Expect to pay dearly for real turtle meat. Last I saw if for sale it was damn near $20 a lb.

Check out recipes for "Mock Turtle Soup" that uses pork that comes from the Boston Butt since it has different texture and color meat, much like turtle meat.

ETA: Some use oxtails, veal and sirloin to make this Mock Turtle Soup.

Sauce piquante is what you want. Skip turtle soup and go for the best.

Looks good, IWEI. Is ground turtle meat popular? I’ve only ever had turtle soup with browned chunks.

i won't waste turtle meat in a soup. i'll make a sauce picante. turtle meat is too expensive to float in a soup.

Meh. Good turtle soup is hard to beat. I keep 5-10lbs in the freezer and won't use it all until I catch another to replace it. I worry about not having it when I want it.

I don't make a soup out of all of it though. I'll sauce piquant some, and if I catch a softshell I will debone and fry. It has a lighter and sweeter flavor I find that gets lost in soups and gravies.
