Sushi Kashiba is great if you’re into the omakase-style sushi. It’s right outside Pike’s Place Market so you really feel like you’re getting the Seattle experience but be prepared to drop some serious coin.

A quirky Seattle spot is the Pink Door. It is Italian/American. Some nights they have a small jazz band, others they have aerial acrobatics (a chick on rings, ropes, and a trapeze). They used to have a burlesque show on Saturday nights but I don't think they do it anymore. Some places that are dinner and show the food is an afterthought but it has always been good when I was there with reasonable prices (but that has changed everywhere recently). I always think of it when I think of a "Seattle" dining experience.

Din Tai Fung! Pork Xiao Long Bao and the green beans. Pot stickers are great also. This was the favorite for my wife and I on our trip to Seattle that we took in May.
We also had dinner one evening at Brunello Ristorante Italiano and that was very good also. The carbonara was fantastic.

I booked el Gaucho and Spinasse. I’ll report back. Spinasse had one opening at 9:30pm on a Tuesday, otherwise booked until August 3.

wreckless noodle house is insane good. Got the Ma La Braised Beef Cheek Noodles last time.

I had forgotten they have those in the Seattle area. If the OP needs a casual non-reservation meal this would be an excellent choice especially if they have never been to one.
It is funny my wife and I were talking about their crab and pork Xiao Long Bao just a couple of hours ago because we will be in San Jose later this year visiting friends and there is one about 10 minutes from their house.

There is a stall in pikes market across from the fish market that sells Asian food. The menus are all in Chinese, the employees are all Asian, and there was a ton of Asians in line as customers. They sell bao and pork on a stick.

I went to this modern Indian restaurant Meesha, which I thought was fantastic.
Also, random, if you like ginger beer, check out Rachel’s Ginger Beer. Few locations around the city, lots of flavors. Thought it was really unique.

We were walking one morning for exercise and looking for breakfast. We passed by Biscuit Bitch. Told my wife we didn't have to eat here, but wanted to see if they had a t-shirt for sale. We did pick up breakfast and a shirt. The biscuit was big enough to share and I wear my Biscuit Bitch shirt just to annoy my wife

Agree with Pink Door. Had lunch there recently and it was great.
Aerlume is a great dinner spot.
