I usually just season with s&p, put it in a sous vide bag and then wear it in my pants for an afternoon. Comes out a perfectly cooked raw-blue rare.

They're legal here in Texas.
Treat them like you would a steak, cook it medium rare.

Reverse sear is what I've always done. Damn good meat.

Reverse sear to medium rare/rare and only season with salt and pepper. If youre cooking for someone who isnt a fan of wild game (even though sandhills have no gameyness what so ever) I sometimes do a jalepeno peach glaze and grill some peach slices as a garnish and you cant go wrong

Soak in Cajun Power Garlic sauce at least 3 hours prior to cooking.
