I caught the first episode and can't wait to watch the rest.
Good stuff. I had no idea olive oil expired, or even how they harvested the olives. Learned a lot.
What's strange is on completely different cooking shows I'm certain I've seen that same olive oil place and the same old soy sauce place
But I love the show. She has such a vibrant personality. Seems like someone you'd just love to be around all the time.

Based on this thread I watched the first episode. Really enjoyed.
We did the exact same Parmesan your she did about two weeks ago.

I finished watching the second and third episodes last night. I'm a bit tired so might not start the 4th until tomorrow
The next 2 episodes are every bit as enjoyable. I knew where she was going for the salt one before it even started

That salt episode was really fun to watch.

I was playing on my chromebook during the episode and out of curiosity wondered if you could buy some of the things they were talking about
Found the Moshio Seaweed Salt and Amazon
I didn't order any but I put it in my wish list for when I'm feeling more impulsive (or actually need some salt)

Now that is some expensive salt.

Hey, thanks assholes. I stayed up late as shite last night watching this entire show.
Agree with y'all, definitely worth a watch. Some helpful cooking tips thrown into a very fun, insightful, beautiful show about great food and the processes behind making well-balanced meals.

Her idea of a "pinch of salt" is a fistfull of salt. I thought my wife was gonna choke at all the salt she uses.
I wasn't that impressed with the women cooking the steak in the heat episode. I thought throwing rosemary sprigs on the fire was wasteful. However, the chef did a great job of cooking the steaks evenly over the coals. I'm surprised they didn't take the opportunity to talk about sous vide or reverse sear. That would have been appropriate for "heat".

Yeah, no doubt. There's sometimes a really awkward interaction on these food shows when these folks go back to visit with their old highly accomplished bosses. You kind of get the feeling sometimes these chefs are like, "I barely remember you and what I do remember isn't good." I kind of got that vibe from this chef. Mind of Chef had a couple of these run-ins, too.

Agreed. She comes across as very genuine and a lover of food and life. Kind of like Phil on Somebody Feed Phil.
I feel the opposite way about David Chang, as talented as he is.

After watching the first episode, I've decided that I want to be an olive oil snob now.

I enjoy watching just about anything with him in it but every now and then he just seems to get cranky and want to vent about something
And he's obviously very biased towards everything in Asia is better than anything anywhere else. I mean he might be right for all I know but the routine gets a bit old sometimes.

From what I’ve read, the average home cook doesn’t season nearly enough which plays a big part in why we have such a hard time getting our food to taste like good restaurants.
I do admit I laugh at those Tasty videos where they use about 15 salt granules

One thing so impressive is that in episode 1 she spoke fluent Italian, in episode 3 she spoke fluent Spanish, she speaks fluent English, and her family speaks Persian so I assume she’s fluent there too.
What a likable person.
I’m not going to continue making new posts.. but I also love how humble she is. This woman clearly knows her stuff and I know she has a book and whatnot .. and she is just being so humble with these people.

I don't use as much salt at home as they do in restaurants, but I also have to eat my food every day whereas restaurants aren't everyday things for me. If I used that much salt at home, my heart would be most unhappy with me. The recommended daily intake is 2.3g - which is like one of her "pinches."

Doctors and nutritionists tell us to cut back on sodium because they believe that it will reduce our risk of serious diseases.
However, it's important to keep in mind that blood pressure itself doesn't kill anyone directly. It's a risk factor, not necessarily a cause of disease.
Even though some intervention successfully lowers a risk factor, it doesn't mean that this automatically reduces the risk of disease, especially if the intervention causes other adverse effects that outweigh the benefit.
When studies examine the effects of sodium restriction on actual disease, instead of just some marker, no statistically significant effects are found.
Another Cochrane review of 7 randomized controlled trials (the gold standard of research) noted that there is no effect on mortality or cardiovascular disease, even in individuals diagnosed with high blood pressure (4)!
Other studies confirm these findings. There is no benefit to sodium restriction when it comes to preventing heart disease or death (5, 6).

There are plenty of studies that dispute the government guidelines but that can be another thread.
I made pesto last night after I watched episode one.
