From what I know, they wanted the majority of the taps to be local/regional. So realistically, at a place like this I'd be happy if they did something like this with the remaining 6 taps:

Very good point. Canefield may have a comparable menu to a lot of places in town, but there's only so many places in their "sphere of traffic" so to say that have that type of menu. It's them, Brightside Bar & Grill, Marty J's, and Walk On's. 4 will enter, likely 2 will survive.
As for the original Sammy's, it's only competition in it's "sphere of traffic" is the Georges out there which is nowhere near as good as the original.

Not bad. I'd kick out the Abita Amber because they already have Parish amber and canebrake.
Make it Abita's Select series and maybe a rotating DIPA or Sour tap.

I have ate at the location in Natchez twice, I pass it on my trips to go deer hunting. the cheesecake is worth every bit of the price and so is the BLT. its not anything new and exciting but they serve very good food.

Personally, I agree. Business-wise, people drink the crap out of Abita Amber, so my guess is that it ends up being one of the taps. For a restaurant that's not a beer bar like Chimes, that's a decent enough start. That's already a better list than most (see Sammy's, Walk-Ons, etc).

Went for dinner Wednesday night with the family. Looks nothing like Boutin's on the inside, which is a plus. Initially told a 15 minute wait, but we were seated 5 minutes later.
Beer selection was above average. Got a Founders Nitro Oatmeal Stout and later an Abita Wrought Iron IPA. $5.50 craft beer pints isn't a bad price.
I split the fried shrimp loaf with my 9 year old daughter. The shrimp were huge, but fried nicely. I would have preferred smaller shrimp and more of them instead of fewer jumbo shrimp. The fries were fries, but cooked well enough.
The wife got the shrimp and alligator sausage cheesecake. It was really good. Not a huge portion, but very filling.
Older daughter got a cheeseburger. Half pound burger appeared to be cooked a perfect medium and the bun at least looked to be high quality. She ate half and took half home, but I didn't get to try it.
All in all, there was a bunch of stuff on the menu that looked interesting and that I'd like to try. I'll be back, as it's close to our house.
