This is a good technique for cooking a steak, and for not setting off fire alarms. Consider it a stove top only version of reverse sear

Thanks pal. May give this a try tonight actually while the wife is out at a birthday dinner. Including a twice baked potato of course

I remember reading an article that discussed getting a cast iron skillet to an exact temperature using an infrared thermometer as a spinoff to Ducasse's method.

It was a perfect Maillard reaction, even over the entire surface of the steak, and a medium rare center with very minimal graying. I can never find it when I look for it though.

Would be interesting to see if there's actually a fool proof scientific way of using that technique.

I am planning on breaking out the grill at the new house this weekend.

2 four packs of 3-Way,
Weather couldn't be better, no ways,
I'll git some strips and a fifth of Patron
I feel a reverse sear coming on

You and Janky need to have a reverse sear off. You're the only one that's come close.

The hell you say. I don't even take pics of my perfect reverse sears anymore. I did one tonight with a ribeye.

Same here The plan is to one day get an improved set, but too many other things on the list before that. In the meantime, I am stuck eating off these

Thanks! This and the master bath were to two primary areas of focus when building my house three years ago. It came out really nice, though I wish it were a bit brighter after using it for a while. Still I am very happy with it. The Thermadores are legit; I'm glad I spent the extra coin to get those.
