I remember reading an article that discussed getting a cast iron skillet to an exact temperature using an infrared thermometer as a spinoff to Ducasse's method.
It was a perfect Maillard reaction, even over the entire surface of the steak, and a medium rare center with very minimal graying. I can never find it when I look for it though.

Would be interesting to see if there's actually a fool proof scientific way of using that technique.

Thanks! This and the master bath were to two primary areas of focus when building my house three years ago. It came out really nice, though I wish it were a bit brighter after using it for a while. Still I am very happy with it. The Thermadores are legit; I'm glad I spent the extra coin to get those.
