Red beans is probably the top recipe on my list. I don't make it as much as I'd like to eat it because it takes me so long in orep time, chopping etc in addition to the cook time.

used to love red beans as a kid, still like them but not near my favorite. As i have gotten older, i have found more and more that all beans are trash imo. including white beans.

I do all this the day before. Soak beans overnight. Cook the next day. Usually cook my beans on Sunday to eat on Monday. If I don't have the time to cook on the stove they go in the instapot.

I'm with you on this. I rarely, if ever now, eat beans. I don't think they're good for you, and they cause digestive issues, which people for whatever reason just accept.

I'm actually good with most bean products. They all have their place in my diet. However, red beans, rice and jalapeno cornbread take the lead.
I do eat more red beans than any other, but will also eat most every other bean I can think of.
I also love a good 15 bean soup that I fix several times a year.

Soup beans and cornbread are definitely a Kentucky lunch staple. I guess it'd be good on rice too.
Can't beat it though. Country, fresh cut Vidalia onion, chow chow all tossed in there. Making myself hungry. Red beans and rice I think spicy because I always put hot sauce in there. Both excellent comfort meals.
