The other thread made me realize I have a huge jar of Kirkland pesto. Give me your best recipes containing pesto.

I got a new food processor for Christmas. I can't wait to use that badboy to make some fresh pesto, chimichurri, hummus, etc. very soon.

For pesto in particular, I love a simple pesto pasta and fish like salmon over the top.

We do something like the recipe below quite often.

When the tomatoes are out of season, we generally use roma or sliced cherry tomatoes. We cover the chicken in the tomatoes rather than just one slice. We cut the mozz pretty thick. We prefer the cheese on top of the tomatoes, but either way works.

We do not add garlic because generally, the pesto has plenty. We salt and pepper the chicken with black pepper.

The juices are quite good.

You can use breasts or thighs.

You can also make a good tomato basil soup and add pesto to it during cooking or on top of each serving or both.

Pizza

Hear me out.

Pizza crust, put pesto down instead of sauce, cut some link sausage into 1/4 inch thick pieces, some cut up cooked chicken breast, some caramelized onions, corn, and parm cheese. it's frickin incredible

Marinate chicken in it over night then grill. I do that fairly often in the summer.

Schmear it onto decent bread & toast it
Use it as a sandwich spread in lieu of mayo
Boil baby new potatoes & toss w/pesto
Use as a dressing for a white bean salad (add red onion, parsley, finely chopped celery, green onions, etc)

You can also fold in bread crumbs, coat chicken thighs, thin pork chops, etc... and then grill it. You get this nice crusty thing going on.

This reminds me of the pesto crusted trout at Zea's. I haven't had it in years, but I've done something similar with fish and chicken.

I have only ever made it at home or had it in restaurants. I could eat it right out of the bowl.

This thread caused me to eat fresh pasta from Bellegarde bakery tossed with pesto for dinner. It was tasty.

Thin-sliced roast pork, sauteed sweet peppers, swiss or sharp provo, pesto on a hogie, preferably steamed or toasted.

Butterfly a pork tenderloin.

Stuff the seasoned pork tenderloin with pesto and feta cheese.

Roast in oven or on a wood fired grill.

Enjoy..
