A friend of mine introduced me to low level oil frying. You can get away with like a1/4 to 1/2" of oil. You just have to play close attn. and flip at the right time. So much less waste and hassle.

Of the three or four times I’ve tried it, I don’t find that cooking anything in a rotisserie fashion is worth the effort. It takes too long and is a PITA.

Customer made equipment for specific proteins must be the key.

I've always steered away from making risotto. I've never eaten it, and I guess I don't understand what I would be trying to accomplish.

I've done it a few times with a less complex method by Serious Eats and it came out really well every time with minimal effort:

A correctly prepared risotto can be amazing. I’ve actually gotten fairly proficient at it. Gotta keep it hydrated, and keep it moving without killing the simmer.

One of my favorite dishes. there was a place in houston when i lived there that made and i loved it. when we moved back to baton rouge i found no restaurant that served it. i decided i was going to make it myself. watched tons of videos. it came out perfect.... but i told myself i would never cook it again way too much work for what it was...

TLDR: Not worth it.

Tamales, I love them, but sure is a lot of work, I need to find someplace in BR that has Delta-style tamales.

Crawfish bisque with stuffed heads. Tradition be damned, I make boulettes and add to the bisque. Easier to eat and everybody really loves it that way.

With several exemptions, I like my veggies cooked simply, steamed broccoli, steamed asparagus, a quick stir-fry of leafy greens, please don't overcook.

Don’t really enjoy baking.
Not a big fan of frying, at least not indoors. Frying fish in the back yard is fine.

Wife got me the Ninja Professional Plus Processor for Christmas. I didn’t think I would use it much but it is awesome and I use it quite a bit.

Making your own sauce out of dried peppers is the way to go. So much better than canned sauces. You have to do it a few times to dial in the exact flavor profile you want but premade sauces aren’t even comparable.
