Question About Competition BBQ Events

I'm on a committee in charge of Cookin on The Cane, which is an IBCA sanctioned BBQ event here in Natchitoches. I'm looking for ways to get the public involved as far as allowing them to sample food cooked by the teams. Any of you have any experience in this as far as setting up a People's Choice? Are the cooks usually reluctant to participate in this?

We had a resident expert on here that was full of all sorts of knowledge but I think he got banned

I've seen a people's choice award conducted as a fundraiser: the public didn't get any free food, but they could vote for their favorites by putting a dollar (or equivalent ticket) toward the team of their choice. All proceeds went to a designated charity. Sure, you could stuff the ballot box & buy the award, but since it was a charity benefit, no one cared.

We never were because we always did better in that than the regular comp. The judges in Memphis in May type events wanted a certain type of product, and regular people tend to want something else.

I was thinking about seeing if I could get the cooks to do something on Friday night, ahead of the IBCA sanctioned competition which is on Saturday. They all arrive by Friday anyway because they have to attend the cook's meeting at a set time that evening.

Maybe a chef's choice/one bite challenge type of thing. I'd charge the public $10 and they could walk around to each team's cook site and sample the food. Maybe give them a ticket to drop in the team's bucket they want to vote for. I can probably get a cash prize sponsored by a business here and the team's only expense would be the purchase of whatever food they choose to cook. Think I would have any takers on that from the teams?

That's almost exactly what they do at the annual bbq competition they have at the state farmer's market here in Cola. When you pay to get in as a non-competitor, you get I think it was ten tickets. Each competitor had a little can for you to drop tickets in. At the end of the day there was a separate award for "fan favorite" or whatnot. As far as I could tell all teams participated, although while talking to one guy he said they all pretty much did two cooks...one for the judges, and one for the public. I think it was under $15 to get in and I left stuffed.

How many teams? How many portions would you expect them to make?

I think you would have takers, but you might want to provide some focus and pick a central theme or ingredient.

I expect 20-25 teams but I wouldn't expect all to participate. 100-150 VERY samll portions.

Think he took a different route from Chef Rob when he started cooking daily, stayed off social media. Imagine he will be back soon after his win at Hogs last weekend.

Notice the difference in reaction when Blue Oak won to when CCBBQ won.

Bacon is great and easy to do lots of dishes, but I think just a pork or beef category with a focus on variety/taste provides a better vehicle to give the public a feel for the BBQ competition compared to bacon dishes.

Are you going to have them cook out there? Or can they prep ahead and just finish out there?

Won 3 out the last 5 at that. And I've tried his comp stuff (subtle brag). It was phenomenal.

I see.

Does bbq quality get easier when you're cooking for a small group of judges as compared to hundreds like the other teams that sold their food?
