Recently came into possession of 50ish pen raised quail. 50/50 mix of skinned and plucked birds. All have been spatchcocked already.

I've never messed with quail so I humbly request help on what to do with them. Experienced cook, just a new ingredient.

Deep fried is hard to beat. They grill/BBQ very well, too.

Don’t overcook them. Other than that it’s hard to find a way that they aren’t going to be good.

This is correct. Quail is my favorite game to eat, and the only way I've found I don't like it is overcooked

Stuff a dozen with cornbread dressing and bake in the oven.
Tasty!
