Every once in a while I make chili Colorado. Sometimes I pop a potato in it to stretch it. It works well.

Just be aware, that if you simmer the chili for an extended time, or put it in a crock pot, the potatoes will break down and act like a sauce thickener and turn your chili into more of a porridge consistency. Not bad, but different.

I've never put potatoes in my chili, but I routinely serve it with a side of wedge fries and cheese sauce. Fill half a big bowl with the fries and half with the chili and some onions, cilantro, etc. Pour cheese sauce down the middle.

There's a Mexican dish called picadillo that is pretty much chili with potatoes in it. I've never had it, but it looks tasty.

my wife puts potatoes in her taco meat recipe it’s really good. Chili served over whole cooked hominy is really great as well

also you can let the grease come up to the top of a pot of cooked chili then spread cornbread batter over the top in a layer and bake in the oven. Really really good

We used to get baked potatoes and chili from Wendy’s. They were both on the 99 cent menu. Dinner for $4.

Or you could just add chili powder to your beef stew.
